2 Tbsp olive oil or butter
1 clove garlic, minced
1 can (28oz) Italian plum tomatoes, chopped, juice reserved
1 tsp sugar
1 Tbsp chopped fresh basil
salt and black pepper
- Heat oil in medium saucepan over medium heat. Add garlic; cook 30 seconds or until fragrant. Stir in tomatoes with juice and sugar; cook 20 minutes.
- Stir in basil; cook 2 minutes. Season to taste with salt and pepper.
If using fresh plum tomatoes, use 2 pounds peeled, seeded, and chopped tomatoes, and reduce cooking time to 10 minutes.
